Ingredients:

  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh parsley for garnish

Instructions:

  • Preheat the oven to 375°F (190°C).

  • Dredge each chicken breast in flour, shaking off the excess.
  • Dip the floured chicken into the beaten eggs, then coat with the breadcrumb mixture, pressing to adhere.
  • In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side.
  • Transfer the chicken to a baking dish. Pour marinara sauce over the chicken and sprinkle with mozzarella cheese.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  • Garnish with fresh parsley before serving.
