Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 cups dashi stock (or water)
  • 2 large eggs
  • 4 cups shredded cabbage
  • 1/2 cup chopped green onions
  • 1/4 cup pickled ginger
  • 1/2 cup cooked and chopped bacon or pork
  • 1/4 cup mayonnaise
  • 1/4 cup okonomiyaki sauce
  • A sprinkle of bonito flakes (optional)
  • A sprinkle of aonori (seaweed flakes) (optional)

Kitchen Tools Needed:

  • Large mixing bowl
  • Non-stick skillet
  • Ladle
  • Spatula

Instructions:

  • In a large bowl, mix the flour and dashi stock until smooth.
  • Add the eggs and mix well until combined.
  • Fold in the shredded cabbage, green onions, pickled ginger, and cooked bacon or pork.
  • Heat a non-stick skillet over medium heat and lightly grease it.
  • Pour a ladleful of the batter onto the skillet, forming a round pancake.
  • Cook for about 4-5 minutes on one side until golden brown, then flip and cook for another 4-5 minutes.
  • Repeat with the remaining batter, adjusting the heat as necessary.
  • Serve hot, drizzled with mayonnaise and okonomiyaki sauce, and topped with bonito flakes and aonori if desired.
