Ingredients:
- 2 cups all-purpose flour
- 1 1/2 cups dashi stock (or water)
- 2 large eggs
- 4 cups shredded cabbage
- 1/2 cup chopped green onions
- 1/4 cup pickled ginger
- 1/2 cup cooked and chopped bacon or pork
- 1/4 cup mayonnaise
- 1/4 cup okonomiyaki sauce
- A sprinkle of bonito flakes (optional)
- A sprinkle of aonori (seaweed flakes) (optional)

- Large mixing bowl
- Non-stick skillet
- Ladle
- Spatula
Instructions:
- In a large bowl, mix the flour and dashi stock until smooth.
- Add the eggs and mix well until combined.
- Fold in the shredded cabbage, green onions, pickled ginger, and cooked bacon or pork.
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour a ladleful of the batter onto the skillet, forming a round pancake.
- Cook for about 4-5 minutes on one side until golden brown, then flip and cook for another 4-5 minutes.
- Repeat with the remaining batter, adjusting the heat as necessary.
- Serve hot, drizzled with mayonnaise and okonomiyaki sauce, and topped with bonito flakes and aonori if desired.
